Ingredients
500 grams AP flour
5 grams Yeast
7 grams Salt
350 ml water
Olive oil
Flour for dusting
Directions
- Mix all ingredients together in a bowl until they come together
- Transfer to a lightly floured surface and knead until you get a smooth dough.
- Coat in oil and place in a bowl. Cover with plastic wrap and let rise for 45 minutes.
- Turn out onto a floured surface and divide dough into two equal portions
- Knead lightly to get dough into a circular shape (knead very lightly- you don’t want a tough dough)
- Take two bowls (medium mixing bowls should be good) and place a cloth inside each one (I used new dish towels, but cloth napkins should work)
- Sprinkle flour over the cloth and place one dough ball into each bowl
- Fold the cloth over the dough and let rest for another 45 minutes
- When there are 30 minutes left place two oven safe dishes with lids in the oven and preheat to 425°
- After the 30 minutes are done take the dishes out of the oven and carefully transfer the dough into the dishes
- Score with a sharp knife and spray with water
- Replace lids and bake for 30 minutes
- Remove lids and lower the oven to 350° and bake for an additional 15 minutes.
